Why can't I get the larger art sizes with matting?

You can mat and/or frame the smaller size. But you can only frame the two larger sizes. Generally large artwork looks better without matting anyway, and with a heftier frame.

Can I get double matting?

Yes, you can get a top mat and a bottom mat. Below the top mat selection box is the "include bottom mat" section. Click on "yes" and the bottom mat selection box will expand. When you select the mats, they will appear around the art (and inside the frame if you have selected a frame as well).
